A highly expressive wine….
Wild strawberries are more flavoursome than greenhouse-grown strawberries because, despite the fact that they are smaller and less appealing to the eye, they grow naturally. They contain quintessential aromas whereas their greenhouse counterparts are grown for their visual appeal but taste insipid and watery.
The same is true of grapes. To produce an expressive wine, the grapes need to be flavourful.
The philosophy applied to organic vineyard management follows through to the harvest – which is done by hand – and the winery. At Château Fougas, alcoholic fermentation and ageing comply with specifications for biodynamic wine growing:
- native yeast only
- ageing in casks for 18 months to fully impart mellowness to the wine with minimal use of sulphur.
- two sorting tables at harvest, one before, the other after destemming,
- fermentation in temperature-controlled stainless steel tanks,
- punching of the cap during alcoholic fermentation.
